Course overview

This distinctive course integrates academic and work-based learning and is intended to equip students with the vocational skills, competencies and knowledge relevant to their future career in the hospitality industry. It is a multi-disciplinary course- as well as studying topics such as front of house, rooms divisions & operations, food and beverage operations, marketing and customer relationship management, they will also learn about other important aspects of the hospitality industry including finance and human resource management. Students will be trained on MICROS - Fidelio software and hardware, enabling them to use MICROS for both front and back office tasks such as placing food orders from customers and recording total menus sold and sales. Fidelio is a Property Management System and Computer Reservation System used to book guest services and record sales. Relevant industry experience is a valuable aspect of this course. Guest speakers from the Food & Beverage, Conference & Banqueting and Recruitment fields will share their expertise. There will be educational visits to various hotels offering a range of guest experiences.


Assessment

Formative and summative, self-assessment and reflection are all part of the assessment strategy for this course. All summative assessments are internally moderated and aim to assess performance against the aims of the module and its learning outcomes. This is a course aimed at developing an insight into the Hospitality industry and to equip students’ with a broad range of skills to excel in Hospitality Management. Therefore, the assessments of modules use a range of assessment vehicles including course work and projects. Students will be required to use case studies, reports presentation, software applications and project reports and are also expected to demonstrate effective team work. The course extensively uses group coursework in-order for the students to develop a range of interpersonal, leadership and team building skills.


Entry Requirements

 

 

Applicants require a minimum of 4 GCSE passes at C (including English Language and Mathematics) or above or an equivalent qualification.

 

OR

 

Students with lower qualifications and suitable industrial or external experience in Business may be registered as a student of the Foundation Degree.

Students whose first language is not English are required to produce evidence of English language proficiency at IELTS: 5.5 with a minimum of 5.0 in each component.

On completion of this course of study, students should be able to:

Apply a range of theories and practices of marketing in meeting the demands of customers in various hospitality organisations. Recognise the financial framework as it applies to the hospitality industry and the management of financial and quantitative information for financial planning, monitoring and control. Demonstrate specialist subject knowledge and the practical aspects of food and beverage operations management, front of house and rooms division operations management. Understand and evaluate the purpose and techniques of effective human resource management encompassing the occupational skills areas of managing and developing people in the hospitality industry. Demonstrate specialist subject knowledge and the practical aspects of: menu planning and product development, managing events such as conferences and banquets and the provision of customer service. Research and analyse a range of concepts and operational issues which affect the hospitality industry. Devise and sustain arguments and solve problems affecting the organisation of your choice in the hospitality sector by using ideas and techniques which underpin operations in the hospitality industry. Reflect on work based practices to facilitate professional and personal development. Communicate ideas, principles and concepts effectively by oral, written and visual means with clarity and confidence. Use dedicated hospitality –industry software for rooms management and yield management Utilise time management and problem-solving skills. Develop a range of key skills (academic writing, literacy, numeracy and ICT skills). Demonstrate specialist knowledge, understanding and skills in food and beverage, rooms division, food production and front office management. Identify business problems and their causes and explore the methods used in business to make decisions. Use financial tools and techniques to research, analyse and present information.
